Takkali Thokku
(Tomato Pickle)
We moved to Hyderabad in 2003 and this recipe was shared to me by our neighbor and my first friend there - Kausalya (Kausi). We have been best friends ever since :). We are very excited to share this next recipe with all of you which is Takkali Thokku - loosely translated to tomato pickle. My kids love this recipe and I make it for them at least once a month. Thank you Kausi for sharing this lovely recipe all those years ago - a true classic! I hope you all enjoy Takkali Thokku :)

Method
Wash and roughly chop tomatoes

Coarsely grind the fenugreek seeds using a mortar and pestle
Take a large pressure cooker and put it on the stove on high heat (180° C) and add the Sesame oil. Wait for the oil to release smoke
Add the chopped Tomatoes, Red Chilli powder, Salt, Fenugreek powder, Jaggery powder, Asafoetida (Hing) powder, and Turmeric powder

Secure the lid on the pressure cooker and let tomatoes cook on high heat (180° C). Turn off the heat after 20 minutes -approximately 20-25 whistles on the cooker

Place the cooker back on low heat (100° - 130° C) and let the tomatoes reduce for up to an hour or 70 minutes, stirring the contents every 15 minutes
Takkali Thokku is now ready. Enjoy with hot Idli, Dosa, Parathas or Puri
