Train Chutney
(Onion Tamarind Chutney)
Almost two decades ago, I used to travel with my kids from the northern to the southern part of India and it would be a 2-3 day journey via train. I would make this caramelized onion chutney which would last us the whole journey and my kids loved it. Please enjoy my very first recipe on my website :)

Method
Peel and dice Onions
Take Water in a grinder - add diced Onions, Red Chilli powder, Tamarind, and Salt. Grind the contents to a fine paste. If your grinding vessel is small, you may do this step in multiple batches
In a large Kadhai or Wok, heat oil on high flame (180° Celsius on Induction Cooktop) until you see it smoke
Add Mustard seeds and Asafetida powder, stir for a minute, and add the onion paste
Stir for a minute on high flame, then reduce flame to low (100° - 130° C), close with lid and let simmer for 45 minutes. Stirring every 15 minutes. You might want to keep it on the heat longer to allow the onions to caramelize.
Train Chutney is now ready. Enjoy with Dosa, Idly, Paratha, Puri and also Phulkas
