Method
Wash, dry and dice bhindi
Heat oil in a Wok or Kadhai on high flame (180° C on Induction Cooktop) till it smokes, then add the Methi, Hing and Turmeric Powder to the oil and fry for a minute
Add Bhindi and stir thoroughly taking care not to break it
Reduce heat to medium (150° C on Induction Cooktop)
Add Amchur after 5 minutes and stir
Let Bhindi fry for 20 more minutes stirring often
Move the bhindi around the edges to create a well so excess oil pools in the center - remove this oil using a ladle - we removed about 30g of oil
Add Coriander powder, Red Chilli powder, Garam Masala powder and Salt - stir thoroughly - and let the Bhindi crisp up for 3-5 minutes
Turn off the heat and extract into container - Bhindi Fry is now ready. Enjoy with Roti, Puri, or Paratha
